Ingredients for 6 servings:
– 1 chopped onion
– 1 chopped garlic head
– 4 lemongrass (devided into 2, so 8 in total)
– 1,5l vegetable broth
– 4 tbs red curry paste
– 2 tbs chopped ginger
– 1 chili pepper
– 4 tbs coconut oil
– 800ml chopped tomatoes
– 800ml canned coconut cream
– 6 potatoes
– 500gr cherry tomatoes
– 500gr tofu
– 300gr shitake mushrooms
– 4tbs soy sauce
– 4tbs lime juice
– optional: cilantro
Preparation:
1. Put the coconut oil in a pan and heat up. Add the onion, garlic, ginger and red curry paste and bake for about 5 minutes or until soft.
2. Add the vegetable broth, lemongrass, chopped tomatoes and coconut cream. As soon as it starts boiling, add the potatoes and leave for 5 minutes.
3. Add the (chopped) shitakes, soy sauce, lime juice and chili pepper (chopped and without seeds) and allow to boil another 3 minutes.
4. Add the cherry tomatoes and tofu and let boil another 5 minutes.
5. Optional: serve with cilantro.
