Ingredients for 3 servings:
– 125gr cashews
– 2 medium potatoes
– 2 carrots
– 350gr pasta
– 300gr canned coconut milk
– 1/2 onion
– 2 gloves of garlic
– 1tbs lemon juice
– 2tbs sea salt
– black pepper
– pepper flakes
– optional: mushrooms
Preparation:
1. Put the cashew nuts in hot water for about 15min or until they are soft
2. Peel the potatoes and carrots and cut them into small pieces. Cook them for about 15min.
3. Boil the pasta (and optional prepare the mushrooms)
4. Mix all the ingredients for the sauce with a blender
